Every year, in the third week of November, Italian embassies, consulates and cultural institutes around the world cook, teach and celebrate together. This year feels different. From 16 to 22 November 2026, the Week of Italian Cuisine in the World reaches its eleventh edition, and for the first time Italian cuisine arrives as UNESCO heritage. For a Neapolitan who has spent almost forty years cooking in Japan, those words, Italian cuisine UNESCO heritage, still give me goosebumps.
Italian cuisine UNESCO heritage: what changed last December
On 10 December 2025, in New Delhi, UNESCO inscribed Italian cooking on the Representative List of the Intangible Cultural Heritage of Humanity. Not a single dish. Not a recipe. The whole way of cooking, of shopping, of sitting at the table together. The decision even has a beautiful title: “Italian cooking, between sustainability and biocultural diversity”.
The Week, promoted by Italy’s Ministry of Foreign Affairs since 2016, has already brought more than 10,000 events to over 100 countries. This year’s theme is clear: “Italian cuisine, UNESCO heritage: territories and supply chains of excellence.” Here in Japan, the Italian Chamber of Commerce has announced events and digital content dedicated to our cuisine.
I have walked this road before
For me, the word UNESCO is not abstract. I served on the committee for the Art of the Neapolitan Pizzaiuolo, and I travelled the world presenting our craft during that campaign. When it was inscribed in 2017, I thought of every pizzaiuolo who had stood in front of a wood-fired oven for a lifetime, without anyone ever calling it culture.
The recognition did not change the dough. It changed the respect. People began to understand that behind a Margherita there is a person, a training, a gesture passed from hand to hand. I believe the same will now happen for the whole Italian kitchen.
Territories and supply chains: the real meaning of the theme

I love this year’s theme because it tells the truth. Italian cuisine is not a list of recipes. It is the tomato grown on volcanic soil, the buffalo grazing in Campania, the olive tree, the miller, the cheesemaker. Without the territory and the people who work it, even the most perfect recipe is empty.
As Global Ambassador of Mozzarella di Bufala Campana DOP, I see this every day. The DOP mark is not a sticker. It is a promise that ties a product to a place and to a method. When I explain this to Japanese guests, they understand immediately. Japan, too, is a country of terroir: rice from a certain valley, wagyu from a certain prefecture, sake from a certain water.
Building our own supply chain in Japan

This is why, in recent years, my work has moved closer to the land. At Casa Cuomo Farm in Hita, Oita, we grow ingredients like friarielli, the bitter greens of Naples, in Kyushu soil. At LAB 3680, also in Oita, we produce our Casa Cuomo products with the same care I would use in a restaurant kitchen.
In Tokyo, our Fresh Cheese Studio Project brings Casa Cuomo together with a fresh cheese maker from Tokachi, in Hokkaido, at a pop-up inside ecute Shinagawa. Italian technique, Japanese milk, served cold and simple. For me, this is exactly what “territories and supply chains” means outside Italy: not copying Italy, but respecting its method with the best of the place where you live.
From the restaurant to every home

The UNESCO recognition speaks about cooking as something that happens in families, every day, not only in famous restaurants. This touches something very personal for me. One of my strongest dreams is to bring real Italian food into every home.
That is why I created ITALYERIA, our online selection of Casa Cuomo artisanal products, with official delivery across all of Japan starting in January. For many people there is no Italian restaurant nearby. So I want to go to them, with products made with the same respect for ingredients that UNESCO now recognises.
What I hope this week will leave behind
Celebrations are beautiful, but they last seven days. What matters is what remains after. I hope this first Week as UNESCO heritage leaves us with more curiosity. Where does this olive oil come from? Who made this cheese? Why does this pasta taste of wheat?
If you are in Japan, look for the events of the Week, visit an Italian restaurant you trust, and ask the chef about the ingredients. If you cook at home, choose one honest product and build a simple dish around it. That is the Italian cuisine UNESCO protects: not luxury, but care.
Almost forty years ago I arrived in Japan with an idea of pizza that nobody here knew. Today Italian cuisine is a heritage of humanity. I feel proud, and I feel responsible. Our job as cooks is to make sure this heritage stays alive on every table, every day.
