More and more of my friends in Japan tell me the same thing: “Salvatore, tonight I’m staying in.” Not because they have nothing to do, but because home has become the favourite restaurant. That one sentence explains where food is going.

The world is eating at home

Online food delivery is one of the fastest-growing corners of the food business: analysts put it at roughly 320 billion US dollars in 2025, growing around nine or ten percent a year (Fortune Business Insights). Japan is a rich and demanding market: food delivery grew from about 408 billion yen in 2018 to over 860 billion in 2023 (Circana Japan), more than double, and growth stayed strong even after restrictions ended.

Why? Comfort, different evenings, wellbeing

I see three reasons. The first is comfort: busy weeks, good kitchens, good televisions.

The second is that evenings are changing. Alcohol consumption per person in Japan has fallen about 25 percent in thirty years (National Tax Agency), and in one survey 44 percent of people in their twenties said they do not drink at all. Once people went out with their boss and carried on late; today that habit has faded and, among fellow restaurateurs, I hear that many places begin to empty out as early as eight o’clock. The rules have changed in the right direction too: it is not acceptable to drink out and then drive. If people drink at home and enjoy their home, I think that is better.

The third: people invest in themselves and their wellbeing. As restaurateurs we have a challenge, but our starting point is not only business: it is nutrition. I do not see this as negative. It should be seen from the positive side and turned into a business formula. There is room for everyone. This message is for my readers, and also for my colleagues.

My story with delivery

It was not born from a commercial calculation, but from a father’s wish. My restaurants were fine dining, where children could not come in, and my children asked me to eat at my place. So I decided to bring my pizza all the way to the home, so my children could eat a first-quality product. It was also a strategy: to enter homes and, one meal after another, educate children’s palates. Those who started with Neapolitan pizza at home at five or six years old have grown up, and they look for that taste, just like my own children. That is the most beautiful part.

About twenty years ago I started in Japan with a line entirely our own: our motorbikes, our staff, our system. On average six or seven scooters per restaurant, a circle of no more than three kilometres, between two and a half and three deliveries per hour. Today platforms like Uber make delivery easy for everyone, and it is a wonderful service. One natural thing to consider: whoever makes the product does not control its transport, yet for the customer it is always the product of whoever made it. That is why we kept delivery in-house, to guarantee quality all the way to the door. Today it is more demanding: there is a shortage of people and demand is very high. One of our solutions comes from here.

Frozen food: the numbers

In Japan in 2024, frozen food consumption hit a record: about 1.3 trillion yen (+4.4%). Producer shipments passed 800 billion yen for the first time and have grown every year since 2020. Worldwide, estimates range from 290 to 325 billion US dollars in 2024 and 384 to 473 billion by 2030: the figures vary, the direction is the same.

Strengths. It keeps for a long time: you eat when you want, not when it expires. Quality is fixed at the best moment and there is less waste. With a microwave or toaster the dish is ready in minutes.

Opportunities. Delivery and evenings at home are growing; vending machines bring the product to hotels, at any hour; online ordering brings it home, with no fixed time.

Worth watching. In 2024 the value of household frozen food rose 1.7% while volumes fell 2.3%: the market grows in value, partly through prices. People choose frozen for quality: the recipe, the ingredients and the way the dish is finished make the difference.

ITALYERIA: Italian food that waits for you

ITALYERIA logo

Those who grew up with Neapolitan pizza delivery are now, I believe, between twenty-five and thirty. The way a dish is prepared has changed: homes have more equipment to heat and cook, and people invest more in their time at home, with high-end appliances, bigger televisions, more space. Some cook quickly, others give cooking more time, but time is never enough, and a dish that is ready quickly will never bother the customer.

The point is to create a high-quality product that is also high quality in the way it is prepared: simple, with a result like in the restaurant. The right heat, the aroma the moment it is ready, the fragrance: all designed in a laboratory and fine-tuned so the customer completes the dish at home, heated and finished at the very moment. ITALYERIA comes from here, and it is perhaps the last phase of what I started in Japan about twenty years ago. The way we serve and educate changes and will keep evolving, because time and logistics move faster than before.

Where you will find it

ITALYERIA products will be in our vending machines, which we are starting to place across Japan, mostly in hotel chains in this first phase: a guest who returns late can enjoy a real Italian meal at any hour. And if you want the service directly at home, you can order all our products online: just visit our website.

Presented at a trade show with the USEN group

In November the USEN group presented this project at a trade show in Japan: Casa Cuomo × USEN WORK WELL, “frozen pizza × frozen vending machine”, with a package designed for hotels. The idea is simple. Sales 24 hours a day, so a guest who wants an authentic pizza late at night or early in the morning can find one. No extra staff needed to expand in-house food service. Authentic taste, because frozen keeps the quality of a just-baked pizza. And safe storage at minus 18 degrees or below. The line-up includes Marinara, Margherita, Diavola, Truffle Pizza, Salsiccia & Smoked Mozzarella and Four-Cheese Pizza. This is only the beginning of a project that will certainly grow, not only in Japan: I am sure I can take it to the international level within three years.

What I believe

Delivery is not a trend to fight; it is a habit to respect. Wherever you choose to eat, at the restaurant, at the hotel or on your sofa, the food should be worth the moment. That is what we are building with ITALYERIA, one product at a time.

ITALYERIA logo

Casa Cuomo × USEN WORK WELL、「冷凍ピザ×冷凍自販機」。

Salvatore Cuomo with a Neapolitan pizza

Surgelati in Giappone

E conservazione sicura a meno 18 gradi o meno.

ITALYERIA logo

Casa Cuomo × USEN WORK WELL, ‘냉동 피자 × 냉동 자판기’로, 호텔을 위한 패키지입니다.

ITALYERIA logo

Casa Cuomo × USEN WORK WELL,“冷冻披萨 × 冷冻自动售货机”,是为酒店设计的方案。

Kenapa? Kenyamanan, malam yang berbeda, kesehatan

Menurut saya ada tiga alasan. Pertama, kenyamanan: minggu yang padat, dapur yang bagus, televisi yang bagus.

Kedua, malam hari sedang berubah.

Salvatore Cuomo with a Neapolitan pizza

Idenya sederhana.
