Panettone artisan: apa kata angka-angka 2026

Every year, when the first cold evenings arrive in Tokyo, I start thinking about one thing: artisanal panettone. This year the news from Italy makes me happy: 63% of Italian artisans plan to bake more panettone for Christmas 2026, and 58% will keep their prices the same as last year.

In a time when everything costs more, this is not a small decision. It is a choice of respect: for the families who buy, and for a tradition that must not become a luxury for a few.

Artisanal panettone: what the 2026 numbers say

The survey collected answers from more than 500 artisans registered for the tenth edition of the Mastro Panettone d’Élite competition, whose final was held on 27 October in Puglia. Some numbers made me smile. Last Christmas, 64.2% of them sold every single panettone they made. For almost one shop in four, panettone is worth more than 60% of Christmas takings.

And the most loved? Still the classic, with raisins and candied orange, first for 58% of the artisans. Chocolate follows far behind, at 18.5%. Fashions come and go. The original stays.

There is also a worry, and I know it very well. Six businesses out of ten will hire more people for the season, but finding qualified staff is one of the biggest obstacles, mentioned as often as the cost of raw materials. Massimiliano Dell’Aera, founder of Goloasi, said it simply: “A well-made panettone must be able to stay on the table of Italians.”

A slice of artisanal panettone showing its soft, airy crumb

The slowest cake in the world

People who see a panettone in a shop do not imagine how much work is inside. A true artisanal panettone is born from lievito madre, the natural mother yeast that the pastry chef feeds and refreshes every day, like a member of the family. The dough is worked in several stages, it rises for many hours, and after baking each panettone is hung upside down to cool, so that its soft dome does not collapse.

From the first dough to the box, it takes days, not hours. In Italy the law also protects the name: since 2005 a ministerial decree defines what can be sold as panettone, with butter, egg yolks, natural leavening, raisins and candied citrus peel. A beautiful example of how a country defends its taste.

Here is a short film by Italia Squisita inside Pasticceria Besuschio in Abbiategrasso, near Milan, a family business since 1845. Watch the hands, the patience, the oven. It is pure poetry.

A Neapolitan and a Milanese cake

Let me tell you the truth: panettone is not from Naples. It is from Milan. At Christmas in my family home in Naples, the table was full of struffoli with honey, roccocò, mostaccioli and susamielli. But panettone arrived everywhere in Italy, in every family, and today it is the symbol of the Italian Christmas all over the world.

And for a pizzaiuolo, panettone is like a cousin. The secret is the same: fermentation. Flour, water, yeast, time and temperature. When I teach young pizzaiuoli, I always say: the dough is alive, you must listen to it. The great lievitisti, the masters of leavened dough, use exactly the same words.

Sliced naturally leavened bread: the same patience behind pizza dough and artisanal panettone

Panettone in Japan: from strawberry cake to lievito madre

When I arrived in Japan almost forty years ago, Christmas had another hero: the Christmas cake, the white sponge with cream and strawberries. It still has. But slowly, year after year, I have watched panettone find its place here too, in department stores and in the windows of serious bakeries.

The Japanese understand panettone because they understand time. It is the same respect for process that you find in miso, in sake, in a good loaf of bread. Craft, patience, no shortcuts.

Leavened dough, every day, in Hita

In my work today, fermentation is at the centre of everything. In our LAB in Hita, in Oita, we develop the doughs and products of Italyeria, our premium frozen brand, and the first rule is always the same: give the dough the time it needs. A good pizza base, like a good panettone, cannot be rushed.

And at the end of November I will celebrate Christmas a little early. I am producing an Italian night in Tokyo for the 160th anniversary of friendship between Italy and Japan, and I want panettone on the dessert table, served the right way, next to our Neapolitan specialities. For me there is no better way to say “Italy” in one bite.

Panettone and a cup of coffee for a slow Christmas breakfast

How to choose, and enjoy, a real panettone

My advice is simple. Read the label: look for lievito madre and butter, and a short list of ingredients. Press gently on the top: a good panettone is soft and comes back. Open it and smell it: you should feel butter, vanilla and orange, nothing artificial.

Then, the most important thing. Before serving, leave it for a while in a warm place, so the butter wakes up. Cut it from the top, in tall slices, like a cake. And eat it slowly, with a coffee in the morning or with friends after dinner.

This year the artisans of Italy have chosen to keep panettone on everyone’s table. Let us honour that choice. Buy a real one, from someone who works with their hands. It is the most beautiful Christmas gift you can give: time.

Mestiere, pazienza, nessuna scorciatoia.

Impasti lievitati, ogni giorno, a Hita
