Pasta Paccheri: Mengapa Bentuk Besar dari Napoli Memikat Dunia

Setiap tahun pada 25 Oktober dunia merayakan World Pasta Day.

World Pasta Day 2026: pasta adalah identitas

Bukan rasanya. Rasa memilikinya.

Saya sangat memahami hal ini. Ketika Anda hidup jauh dari rumah selama hampir empat puluh tahun, sepiring pasta bukan sekadar makanan. Ia adalah paspor, kenangan, sebuah bahasa.

Mengapa pasta paccheri berbicara bahasa Napoli

Sedikit bahan, banyak kesabaran.

Berikut liputan singkat tentang World Pasta Day dari stasiun televisi Italia Tv2000. Sederhana, hangat, sangat Italia.

Rahasia mereka punya nama: Metodo Lenta Lavorazione, metode pengolahan lambat.

Every year on 25 October the world celebrates World Pasta Day. This year one small piece of news made me smile like a child in Naples: according to the data presented for the occasion, paccheri pasta is now the most searched pasta shape, ahead of gnocchi and even spaghetti. A big, simple tube from my land, at the top of the world.

World Pasta Day 2026: pasta is identity

This 28th edition, promoted by Unione Italiana Food and the International Pasta Organisation, was held for the first time in Parma, and the celebrations continue all week. The numbers are impressive. As Beverfood reported, Italy produced about 4.2 million tonnes of pasta in 2025, and more than 60% of it goes abroad. In the first half of 2026, exports grew again.

But the number that touched me most is not economic. In a survey by AstraRicerche for World Pasta Day, reported by WineNews, more than half of Italians said that what they would miss most in a life without pasta is the sense of belonging to Italian culture and tradition. Not the taste. The belonging.

I understand this very well. When you live far from home for almost forty years, a plate of pasta is not only food. It is a passport, a memory, a language.

Why paccheri pasta speaks Neapolitan

Paccheri are large, smooth tubes of durum wheat pasta, born in Campania. The name comes from the Neapolitan dialect: a paccaro is a slap, a smack with the open hand. Some say it is the sound the pasta makes on the plate; some say it is the feeling of so much flavour all at once. In Naples every word has a story, and usually a little theatre too.

Paccheri are honest. There is nowhere to hide. A big tube needs good durum wheat semolina, a slow drying and a sauce with character: a ragù cooked for hours, fresh tomatoes, seafood from the gulf. They also need respect in the cooking. Al dente, always. A paccaro that breaks or collapses is a paccaro that was not respected.

When I see the whole world searching for paccheri, I see curiosity going deeper. People no longer want only “pasta”. They want the right shape for the right sauce, the story of a territory, the gesture behind the product.

Pasta, craft and patience

Great dry pasta is a craft, just like pizza. Semolina, water, a bronze die that leaves a rough surface where the sauce can hold, and time: slow drying, no shortcuts. It is the same philosophy as the pizzaiuolo. Few ingredients, a lot of patience.

Here is a short report on World Pasta Day from the Italian broadcaster Tv2000. Simple, warm, very Italian.

Pasta Rummo: the pasta I represent

There is one name I want to say clearly, because it is part of my work and of my heart: Pasta Rummo. I am proud to be the brand ambassador of Rummo, the master pasta makers of Benevento, in my Campania, since 1846. One family, generation after generation, with the same stubborn idea: pasta must be made slowly, and made well.

Their secret has a name: Metodo Lenta Lavorazione, the slow-working method. Selected durum wheat, a bronze die that leaves a rough, porous surface, and a long, gentle drying that respects the proteins of the wheat. The result is written on every bag: “eccezionale tenuta alla cottura”, exceptional firmness in cooking. For a big shape like paccheri, this is everything. Rummo Paccheri N°111 stay whole, stay al dente and hold the sauce inside and outside, even when the kitchen is busy and the plate has to wait a minute.

In my kitchens in Japan and across Asia I cook with Rummo every day: paccheri with clams, fish and cherry tomatoes, linguine, the little mezzi tubetti for pasta e patate or pasta e fagioli, the dishes of a Neapolitan home. As an ambassador my job is simple: to show that a great pasta from the South of Italy can travel the world without losing its soul.

From Naples to Japan, one plate at a time

Japan loves pasta deeply, and Japanese people understand texture like few others. Here “al dente” needs little explanation: the culture of noodles has trained the palate to feel the bite, the firmness, the life inside the dough. For a Neapolitan cook, this is a gift.

I believe paccheri can speak to Japanese diners in a special way. The shape is generous, the bite is firm, and the sauce goes inside the tube, so every forkful is complete. It is a pasta that asks you to slow down, and slowing down is something Japan knows how to appreciate.

In my work today I try to carry this respect from the field to the plate. At Casa Cuomo Farm in Hita, in Oita, we grow Italian vegetables such as San Marzano tomatoes and basil in Japanese soil. A simple sauce of tomato and basil on good pasta is one of the most difficult dishes in the world, because everything must be perfect. When the tomato comes from a field you know, half of the work is already done.

And with Italyeria, our premium frozen brand, we work in our LAB in Hita so that the flavours of Italian cooking can reach Japanese homes with the same character they have in the restaurant. Different products, the same rule: quality first.

A day for pasta, a lifetime of respect

Italy’s Foreign Minister has also announced a new annual day dedicated to Italian pasta in the world, with events organised by embassies and consulates. I find this beautiful. Pasta is one of the best ambassadors Italy has.

So this week, cook a plate of paccheri. Choose a good durum wheat pasta, take your time with the sauce, and eat it at the table with someone you love. Sunday lunch, said most Italians in the survey, is their favourite moment for pasta. For me, every day can be Sunday, if the plate is right.

World Pasta Day 2026: la pasta è identità

Perché i paccheri parlano napoletano

Pochi ingredienti, tanta pazienza.

Ecco un breve servizio di Tv2000 sul World Pasta Day. Semplice, caldo, molto italiano.

Paccheri

Pasta Rummo:
